1 Cup of dried chickpeas, soaked and sprouted
1/2 Cup Raw Tahini
1/4 Cup EVOO
Juice of 1 Lemon
1 tsp Himalayan Salt
1 TBS Cumin
Garlic, as you like or omit
Freshly Ground Pepper (I prefer a 5 peppercorn blend)
Put all ingredients into your food processor and process until well
incorporated.

RAW CHEF JANE’S Deconstructed Apple Pie
Ingredients for filling:
Apples, cut to your liking as if you were making apple pie
½ tsp Cinnamon
¼ – ½ Cup Coconut Palm Sugar
Dash of Apple Pie Spice
Dash of Himalayan Salt
Blend above ingredients together. If you are making this dish ahead of time, please add the juice of a lemon to the apples so that they don’t turn brown.
For Topping:
Equal parts pecans (or walnuts) and pitted dates. Start with 1 cup of each with a pinch of Himalayan Salt. Blend in food processor until mixture holds together and is crumbly. Put topping on top of apple mixture in a serving dish.
This is a great dessert, which can also be used for breakfast and a snack as well!

Crust
2 C Pecans
2 C dates
Pinch Himalayan Salt
1 TBS Coconut Palm Sugar
Raw Chef Jane writes, “Put all Crust ingredients into food processor and process until the mixture sticks together. I like to use a spring-form pan, but you don’t have to, just so long as you line whatever pan you’re using with plastic wrap. Press the crust mixture into desired thickness into a pan. Set aside (can be put into freezer or refrigerator while preparing the filling). The reason I like to use pecans for the crust is that the mixture of pecans and dates most closely resemble a graham cracker crust, as the pecans have a certain sweetness to them also. But if you don’t have pecans, you can use almonds, brazil nuts, cashews, or walnuts.”
Filling
2 ½ Cups Cashews
Juice of 2 Lemons
½ Cup Agave
½ Cup Coconut Oil
Dash of Himalayan Salt
Start with 1/2 cup of water, adding a little at a time if needed

RCJ’s ASPARAGUS & STRAWBERRIES
Directions:
Raw Chef Jane says, “Combine all ingredients in a bowl and stir well. This is yummy. If you’d like to soften the asparagus in the dehydrator for about ½ to 1 hour, then do so. I like to put my asparagus into a plastic bag with a little EVOO and Himalayan salt (a clove of garlic cut in half is optional), just twist the bag so that nothing can fall out and make sure there is air in the bag so that the asparagus can be shaken. Put it into a glass bowl on the bottom of the dehydrator to soften. Oh – by the way, this makes a great dish on its own as well!”
Raw Chef Jane and her husband are both Master Gardeners, Reiki Masters, and raw vegans. According to her site, neither of them takes any medication, with the exception of occasional supplementation when needed. She says that all of their required nutrients are obtained from the food they eat. Raw Chef Jane adds, “Doctors are astounded at their general health and well-being, mental clarity, low blood pressure, low cholesterol, and in general how well their bodies function.”

Equal Parts walnuts & dates (I’m using 2 cups of each)
1/3 – 1/2 Cup Raw Cacao Powder
2 TBS Coconut Palm Sugar

Put ingredients into food processor and process until mixture sticks together. Be careful not to over-process the mixture, as too much oil will be released from the nuts. It doesn’t affect the taste, but the texture will be oily. Click Here

RAW CHEF JANE’S Raw Vegan Dhal
1 Cup Red Lentils, soaked and sprouted
1 Onion, softened and chopped
1 Large Tomatoes, deseeded and diced
1 clove garlic, pressed
1 Knuckle of Ginger, grated
1-2 tsp Garam Masala
1/2 tsp Paprika
1 tsp Cumin
Dash Hot Pepper (or to taste)
1 TBS Coconut Palm Sugar
1 Cup Coconut Milk
Juice of half a lemon or lime
Himalayan Salt and Freshly Ground Pepper to taste
Combine lentils, onion, tomatoes, garlic, ginger, cumin, lemon juice, Garam Masala, hot pepper, salt & pepper, coconut palm sugar together and blend well. Add Coconut milk and blend well. If you would like this more soupy, add some more coconut milk.
Serve over Cauliflower rice and top with a dollop of plant-based yogurt and a little chopped cilantro.
KNOXVILLE, Tenn. (WATE) — For those who want to enjoy some chili but in a healthier manner, this may be the recipe for you. Raw Chef Jane shares how to make raw vegan chili.
“This makes a nice amount and will last a few days in the refrigerator,” Jane said. “When
adding any seasoning and spices, add the amount that you like. Remember,
you can always add more but you can’t take it out once you’ve added it,” she said.
Here’s what you need:
4 Cups sprouted chickpeas, or 4 cups walnuts, loosely chopped or gently
broken down in food processor
½ – 1 tsp Himalayan Salt
1 red bell pepper diced
¼ C red onion diced
1 ear of corn, taken off cob
1 tsp – 2 TBS chili powder, depending on your taste buds
1 TBS Italian seasoning
¼ – ½ tsp cayenne pepper (or to taste)
1 clove garlic, pressed
1-2 TBS EVOO
4-5 medium to large tomatoes deseeded and diced
Put into food processor and make a paste from:
1 small onion
4 dates, pitted and soaked
½ C sundried tomatoes, soaked

Raw vegan chef, Jane Karuschkat, is showing us how to have your cake and eat it too.
A raw vegan diet consists of food made within a vegan lifestyle, without the use of heat and unprocessed. Although you might feel limited, Karuschkat says it does not have to be this way.
“My raw vegan brownie’s are a great, healthy snack for your children when they get home from school, as well as something to nibble on for yourself,” she says.
What you will need:

Hummus
3-4 Cups Sprouted Chickpeas
½ C Tahini
¼ C EVOO
Juice of 1 lemon
One or more cloves of garlic
1 tsp Himalayan salt
1 tsp Cumin
Put ingredients into Food processor and blend until well mixed. Can be served with crackers, veggies, on dehydrated flat bread.
KNOXVILLE, Tenn. (WATE) – In preparation for the holidays, Raw Chef jane makes a traditional Ukrainian Christmas Desert called “Kutia”. Click Here
Kutia Recipe:
Soak Raisins and Apricots in some water.
Drain and rinse soaked oats. Set into your working bowl.
Take your chia seeds that have been soaked (this mixture will be kind of pasty), add your Agave and Coconut Palm sugar to the chia, as well as the remaining ingredients and mix by hand until all ingredients are well incorporated.
Add this mixture to your oats and stir until everything is mixed together. Cashew Cream can be added if you’d like, as can other dried fruits.

Fresh Cranberry Sauce
Put all ingredients into Food Processor and pulse until the cranberries have broken down to desired texture. You can add some raisins, chopped walnuts or chopped pecans.

RAW CHEF JANE’s Raw Vegan Greek Tacos
Yogurt Sauce (or, use your favorite plant based yogurt)
2 C Cashews
2/3 C Water
1 TBS Lemon Juice
A little Garlic, Himalayan Salt, and Freshly Ground Pepper, as desired
Blend above ingredients until smooth. Add 1 TBS Dill and incorporate by hand. If you need to add more water to get the texture you want, then add it a little at a time.
Meat
2 C Walnuts
1-2 TBS EVOO
½ – 2/3 C Sundried Tomatoes, rehydrated, well drained, loosely chopped
2 tsp Dried Oregano
1 TBS Finely Chopped Red Onion
½ tsp Cumin
1 Clove Garlic, Pressed
Himalayan Salt and Freshly Ground Pepper to your liking
Pulse Meat ingredients in a food processor until ingredients are incorporated. Do not over process, as the walnuts will become too oily and mushy.
2-3 Plum Tomatoes, deseeded and diced
Putting together:
You can use your favorite wrap, taco shell or lettuce leaf. I’m using Romaine Lettuce boats.
Put meat into your vessel, add some tomato on top of it with yogurt mixture, Chopped Kalamata Olives, Fresh Mint, Fresh Oregano and a little Fresh Thyme.
Garnish with Kalamata Olives, fresh mint, fresh oregano.
Dhal is an Indian dish that can be difficult to pin down but primarily it is made with lentils and a variety of spices. Raw Chef Jane introduces us to the dish while providing her favorite variations.
